Why You Should Try New Methods of Cooking Mexican Cuisine

Thursday, March 11th, 2010

Some cooking methods used in Mexico may be familiar to you already, but there are a few with which you may be less familiar. You have probably fried, boiled, and grilled lots of meals, but have you ever tried a steaming bucket? Do you know what a molcajete is?

Steaming is often used in Mexican cooking. A dish known as barbacoa is steamed. The meat is wrapped in a banana or cactus leaf before being suspended over a boiling pot in a deep pit to steam. Steaming buckets were used to steam tamales. This popular Mexican dish is made of a filling surrounded by masa, which is wrapped in corn husks. Special kettles are now made to make tamales that can cook many at the same time. Sweating is a technique used to skin fresh chilies. Onions and chilies are often soaked to help remove some of their heat. When soaked in milk or a combination of water and vinegar, the chilies become milder in flavor. They need to soak from 30 to 60 minutes.

You are still thinking about the molcajete, are not you? A molcajete is a mortar and pestle. This is a small tool used to grind herbs, spices, and grains. When a lot of corn needed to be ground up, Mexican families would use a metate y mano. This was a large stone with a smooth, slightly concave face. Today, many families buy masa already ground up, but some families still do this task in the traditional way.

Boiling and simmering are often used in Mexican cuisine. Meat and vegetables are often placed into a pot to cook all day long. At the end of the day, the meat is so tender it just falls apart. This is perfect for shredded beef tacos, carnitas, and other dishes.

Grilling is a popular method of cooking in Mexico. The open flame adds so much flavor to the dish. Many meats are marinated in spices and peppers and then grilled so they can be used in various recipes. Grilling and roasting increases the flavor of tomatoes, garlic, onions, chilies and tomatillos. The flame kisses the ingredients, caramelizing the sugars and creating delicious flavors.

Stewing is an old fashioned cooking method that has been used in Mexico for centuries. Stewing requires long cooking times to be done properly. Sometimes they cook the meats and vegetables separately and mix them together at a later point. Stewing can be done in a Dutch oven or in a traditional clay cazuela.

There are so many easy Mexican recipes that you can use to experiment with these methods of cooking in your own kitchen. Practice makes perfect, as they say! Do not be afraid to make mistakes now and then. Research a bit about the different cooking methods and adapt them to your family’s needs. Learning new cooking techniques can not only make you a better cook, it can be lots of fun to try out the new recipes!

As you can see, there is so much to learn about Mexican foods. Their cooking methods of developing the delicious flavors in the food make this a never ending topic of interest for many.

Why You Should Throw the Best Cinco de Mayo Parties

Thursday, March 11th, 2010

Instead of grabbing your keys and heading to the bar, have your own Cinco de Mayo bash. You get to have your favorite foods and drinks and there is no cover charge. Grab your most colorful clothes, throw on some salsa music, and start to plan your party. The best part about all this is you are in charge. The party is in the best of hands.

Plan your menu carefully. Delegate dishes to friends and family if you wish so you do not have to prepare it all yourself. Catering may also be an option to think about. Choose some exotic dishes you love like tamales, quesadillas, and individual flans. Set up a taco or a salsa bar. Provide enough beverages for all of your guests. If you are providing alcoholic drinks, a nice Mexican beer or tequila may be a good choice. Do not forget a non-alcoholic option for those who choose not to imbibe. Horchata and agua fresco are refreshing Mexican beverages suitable for any age.

Decorations will help set the mood. Many party stores now carry supplies for Mexican themed gatherings. You can get brightly colored plates and cups as well as banners to hang on the walls. Strings of multicolor pennants are fun to string outdoors. Put up some red chili lights around the food table and hand out some fun sombreros or maracas to your guests to enjoy. Make some beautiful tissue paper flowers and use them to adorn your home. Hang streamers in the colors of the Mexican flag: red, green, and white. You can even go all out and hang up a pinata.

Write up your guest list. How many can you accommodate in your home? Design your invitations with the colors of the Mexican flag and send them out early enough so your friends can plan on attending. Request that they RSVP so you know how many guests you can expect at the big event.

What about music? Mariachi bands are the perfect choice for these parties. You can find some CDs with this type of music at your local Latino shops. After eating, move some of the furniture out of the way, so your guests can dance during the party.

If you are having a family party and there will be children present, you may want to plan some fun games. Kids enjoy pinatas, pin the tail on the donkey (or burro) and other fun games. If you want to plan ahead, put together a scavenger hunt and pair up kids with adults.

Hosting Cinco de Mayo parties can be fun and rewarding for all. You might even make it an annual occurrence. The key to a great party is planning and delegation; you will not have disappointment when you plan for success.

Once your party has ended you will be able to look back and judge its success. Did your guests enjoy themselves? What about you? You will know it was successful if you can look back with fond memories.

Mexican Recipes are a great change of pace and nothing makes them better than a wonderful Mexican Holiday calibration. If you like an excuse to get dressed up and have a good time why not try throwing your own Cinco de Mayo parties and if your having a party you’ll need food. http://www.MexicanFoodRecipes.org When it has to be Real Authentic Mexican Food

Why You Should Try Mexican Herbs and Spices

Thursday, March 11th, 2010

It is the herbs and spices used in Mexican cooking that truly make the meal. If these ingredients were not added, a Mexican dish would not differ greatly from many others. The herbs and spices used in Mexico help make the cuisine special. It is good to learn all you can about them.

Chile powder is used in almost every Mexican dish. This common spice is usually a mixture of many different chilies. Chipotle is one kind of seasoning you may find. It is made from dried smoked jalapeno peppers. Ancho peppers, on the other hand, give food a more sweet, fruity flavor. Many commercial chile powders that you find at the market are actually a combination of oregano, coriander, cumin, garlic, salt, and chilies.

Epazote is a green herb that grows fairly tall. Also known as, Mexican tea, this herb is used in bean dishes to add flavor and relieve digestive problems that beans may cause. Epazote is potent and should only be used in small quantities. Large quantities can be toxic. Just add a couple of leaves to your bean dish as it cooks.

Annatto seeds are used to color food and give it a distinct flavor. This spice is most often used in rice recipes or sauces. The seeds are soaked in water for at least an hour before using. They are usually crushed after soaking. Some recipes use the leftover water that the seeds were soaked in and other recipes use the seeds themselves. They are a common ingredient in marinades.

You see cilantro at a lot of Mexican restaurants used as garnish or added to tacos and salads. It looks a lot like flat leaf parsley. Cilantro is what they call the leaves of the coriander plant. It should always be used when fresh. Cilantro has a tangy, pungent flavor that it imparts easily to salsa, rice, moles, beans, soups, and stews. It has a way of brightening up a dish.

The seeds of the cumin plant are often used in Mexican cooking. Cumin seeds can be used ground into powder or whole. It is often used with chile powder to create a nice balance in the flavors. Soups, stews and many other dishes are better after you add cumin. Azafran, also known as safflower or Mexican saffron, adds flavor and color to a dish, making it a beautiful yellow. This spice is used sparingly because it can be bitter. It is frequently added to rice or seafood.

If you are looking for free traditional Mexican recipes you will find that you need many of these spices as well as thyme and oregano. Mexican oregano is very different from Italian oregano. It has an earthy quality that really adds a lot to the food. Unless you live in an area with a large Mexican population, it may be difficult to find. You can sometimes find it in the grocery store or in specialty herb catalogs.

Take time to learn the familiar flavors of Mexico by paying attention to the spices and herbs they use every day. An authentic Mexican taste is impossible without them. Make the most out of your Mexican cooking by learning the correct way to use these spices. Your meals will be amazingly good once you learn the secrets of these seasonings.

Mexican food makes a great change from the usual dishes and if you want to surprise your family with something deliciously different tonight. Mexican food is tasty and will be a favorite. Traditional Mexican food is as easy to make as they’re tasty. An Insiders Guide to Handling Seafood

Thursday, March 11th, 2010

A healthy diet includes seafood. It not only provides you with high quality protein, it provides omega-3 fatty acids and many other essentials to health. In order to get your full nutrition and value from seafood, you need to know how to handle it right. Following these basic safety rules will keep your seafood safe and delicious.

When you go to the fish counter in your local supermarket, the seafood should be displayed in a refrigerated case or on a thick bed of fresh ice. The entire area should smell clean without the least hint of fishiness. Take a close look at the fish. The eyes should be clear with a slight bulge. There are very few types of fish with naturally cloudy eyes that are sold at most fish counters.

Both fillets and whole fish should have flesh that is firm and shiny. The gills should be a nice bright red and there should be no evidence of slime. Dull colored meat could mean the fish has been sitting there too long. If you press the meat with your finger, it should spring back. Fillets should not look like they are drying out or darkening around the edges. There should be no yellow or green discoloration and there should be no areas that look dry or mushy.

Shellfish come with a tag or label from their processors. No fishmonger should have a problem showing you these tags or labels if you request it. Really good ones will have them displayed with the seafood. These tags are marked with the processor’s certification number and other information you may need to know about your seafood.

Toss any oysters, clams, or mussels that are cracked or broken. To check whole ones, tap on the shells. Live shellfish will close up tightly when tapped. If they do not close, pass them by. Lobsters and crabs that are purchased alive should be showing some leg movement. They spoil very fast, so buying these foods live is the only way to guarantee what you are getting is fresh.

Once you get home, store your seafood safely. If you will be using it within two days of purchasing, put it in a cold area of the refrigerator. If you will be waiting longer, you should consider freezing it. Living seafood should be eaten the same day you purchase it ideally. Frozen seafood should be thawed gradually overnight in the fridge. Always remember to wash your cutting board, knives, and hands to prevent cross contamination with other foods.

It does not matter if you are making a full seafood meal or some easy appetizers. Always make sure your seafood is cooked properly. Fish will turn an opaque color and flake easily when it is done. Lobster and shrimp will take on an opaque pearly quality when they are perfectly cooked. Scallops will be a nice milky white and firm to the touch. Oysters, mussels, and clams are done when their shells open. Discard any that do not open.

By using these simple steps, your seafood will taste wonderful because you are getting the freshest you can get. Your guests and family will be safe eating seafood that has been handled properly. The worst thing that could happen is causing your guests to be sick. By following these precautions, your seafood will not only be delicious, it will be perfectly safe.

Seafood appetizers make a nice change of pace from ordinary appetizers and will fill out your party meal perfectly. Many people like to put out shrimp appetizers when everyone gathers for the big meal. These can be as simple as a plate of shrimp to more elaborate appetizers that look so festive. http://www.EasyAppetizerRecipes.net You Make the Appetizers, We Help You Make Them Delicious.

Coffee May Help Risk With Heart Rhythm Problems

Wednesday, March 10th, 2010

A new study shows that drinking coffee in moderation can actually help prevent serious problems and hospitalization caused by irregular heart beat.

One of the researchers of this study has reported that people who drink 4 or more cups of coffee each day had nearly an 18 percent less chance of being hospitalized from problems stemming from heart rhythm problems.

The details of the study were released in San Francisco at the American Heart Association’s 50th Annual Conference on Cardiovascular Disease Epidemiology and Prevention on March 5, 2010.

According to Kaiser Permanente, which did the research, although it has been established that very large doses of caffeine can lead to rhythm problems, there has been little research about the amount of coffee people drink.

A previous study in Denmark showed no difference in atrial fibrillation between people who were heavy coffee drinkers with those who were light drinkers.

But this study by Kaiser Permanente shows that when looking at a large group of people, the heavy coffee drinkers were least likely to end up in the hospital from heart rhythm problems.

The results of the study seem to go against common advice for people who experience heart palpitations. Usually doctors recommend patients such as this actually decrease their coffee intake because it is believed that the caffeine actually increases the irregular heart rhythms.

“However, these data might be reassuring to people who drink moderate amounts of coffee that their habit is not likely to cause a major rhythm disturbance,” said study researcher Arthur L. Klatsky, MD, senior consultant in cardiology at Kaiser Permanente Division of Research in Oakland, California on the health care company’s website.

The study does not provide enough evidence to actually say that people should drink caffeine, or coffee to prevent these heart problems, he clarified, but it does show that people who have rhythm problems do not necessarily need to stop drinking coffee.

The study was done on 130,000 recipients of Kaiser Permanente health insurance. It looked at data during routine physicals from 1978 to 1985 that patients provided regarding their coffee, alcohol and smoking habits. Klatsky said that the group of people was actually studied until 2008.

The results of the study showed that people with irregular heartbeats who drank at least four cups a day had an 18 percent less chance of ending up in the hospital for heart rhythm issues.

Those who drank up to 3 cups a day saw a 7 percent reduced risk.

The study did not determine a reason as to why drinking more coffee actually reduces this risk.

A doctor who reviewed the findings for the WebMD website said the results seem to reflect what heart specialists have seen with their own patients.

Sumeet S. Chugh, MD, associate director of the Heart Institute at Cedars-Sinai Medical Center, Los Angeles told WebMD that the study reaffirms that doctors don’t think coffee actually generates arrthymias (irregular heartbeat).

However, he said, if you already have arrthymia, the study doesn’t show how coffee will affect you, so the best idea is to cut back on your caffeine and see if it goes away.

More Health Benefits to Drinking Java

Wednesday, March 10th, 2010

There is more good news for coffee drinkers.

Two studies have shown that drinking coffee can reduce your risk of stroke and may also reduce the chance you are hospitalized for heart rhythm problems.

Each year more and more studies show the benefits of drinking coffee. In addition to improved brain function and alertness, it appears coffee may also help reduce the risk of two of the leading killers in our society: stroke and heart problems.

A study by Kaiser Permanent in Oakland, California shows that people who drink at least 4 cups of coffee a day have an 18 percent less chance of being hospitalized for irregular heart beat.

A study by the University of Cambridge in England shows benefits for those at risk of stroke.

This study released in February 2010, a few weeks before the heartbeat study, showed that people who drank coffee had a 27 percent less risk of having a stroke than those who didn’t drink coffee.

The study did not show that it actually matters whether someone drinks one cup of coffee a day or four or more, the benefits appear to be the same.

The University of Cambridge study took a look at a large group of people based on information they provided about their coffee intake.

It evaluated 23,000 people for 12 years based on information they provided about their coffee drinking, said researcher Yangmei Li, an epidemiologist at the University of Cambridge in England.

The study’s findings were presented in San Antonio at the American Stroke Association’s annual conference in February.

Interestingly the risk stayed the same regardless of what type of coffee people drank, even if it was decaffeinated. In addition, instant and ground coffee had the same effect.

A spokesman for the American Stroke Association said this study reflects others which have shown that coffee has health benefits. Several previous studies have pointed in this direction as well, showing the benefits of coffee consumption.

One reason that it might lower the risk of strokes is that drinking coffee is believed to help reduce the risk of getting Type 2 diabetes, which can lead to strokes and also believed to lower the chances of heart disease.

Previous studies, including one published in Circulation: Journal of the American Heart Association in 2009, show that drinking at least two cups of coffee day leads to a lower stroke risk in nonsmoking women.

The 24-year study, which used Nurses’ Health Study data, showed that women nonsmokers who drank four of more cups of coffee a day had a 20 percent less chance of having a stroke. Women who drank two to three cups a day had a 19 percent less chance and women who drank coffee five to seven times a week had a 12 percent less chance.

What is interesting about this study was that other beverages with caffeine in them, as well as decaffeinated coffee, did not appear to lower the risk the way caffeinated coffee did.

One theory is that the antioxidants in caffeinated coffee reduce inflammation and improve blood vessel function.

Review of “Eat This, Don’t Eat That” From a Parent’s Perspective

Wednesday, March 10th, 2010

“Eat This, Don’t Eat That” was released some time ago and got solid reviews. Is it a book that can help you and your overweight or obese child? Mostly yes, but maybe a little bit no.

To start, “Eat This, Don’t Eat That” is put together very well and has some very practical advice for anyone who wishes to read it. One of the many very informative chapters explains childhood nutrition in eight simple rules, geared toward the education of both parents and children about the problems seen in today’s diets… one of which is misinformation. Most people know about proper nutrition and what they need to attain it but society has set of traps that people tend to fall into. For instance, the super-sized food proportions, no mealtime structure and the hidden sugar in foods.

The book is also great because it makes comparisons between some popular kids foods, forcing parents to think about these foods next time you buy them. In most cases, I was surprised with the results. For example, did you know that Spaghetti O’s have fewer calories and less fat than Macaroni & Cheese? It also provides recommendations for things to pick off of menus for kids when your family eats out – such as choosing grilled chicken breasts over chicken fingers, and so on.

There are only two minor problems that I can for see with the book:

1. Misuse – in the wrong hands or without taking the entire message of the whole book in to consideration, people that follow specific parts of this book but not others could get in to trouble.

2. Not enough emphasis on fitness – changing your diet is only half of the battle when it comes to losing weight and living healthier.

It’s not enough to use the book as a guide to eating out right or making convenience purchases. Make sure to read the book thoroughly and understand the concepts it is teaching so that you can incorporate this into your child’s daily life. It doesn’t matter if you are making healthy restaurant choices once a week and feeding your child too much of the wrong stuff the rest of the week.

A big reason for the rise in childhood obesity is the sedentary lives that people tend to lead, which the book fails to put a lot of emphasis on. It does, however, mention some fantastic exercises for the entire family near the end. Bear in mind that the way to get children healthy is to get them off the couch, away from the video games and outside playing and exercising.

Overall, I would say that this book is worth reading, so long as the parents that do read it take it upon themselves to supplement the information provided in the book with some exercise. This (healthy diet, fun, group exercises) is the approach taken at weight loss camps and has been proven to be successful. However, in and of itself, this book can be helpful in getting your child on the path to living better.

Joe Busch specializes in writing articles related to healthy weight loss for kids. He focuses on proper diets, exercise, and identifying solutions like fat camp. Parents with children that struggle with their weight should consider what used to be called “fat camp” to jump start the process.
